Eggplant Appetizers (13 of 14)

This Eggplant Appetizer recipe is so simple, yet very delicious. I’m not a big fan of eggplants, but I absolutely love this one, as it has this amazing flavor that makes me always reach for more. I hope you enjoy it as much as we do.

Ingredients:

  • 1 eggplant
  • 1-2 tomatoes
  • 2 tablespoons mayonnaise
  • 2 tablespoons cream cheese
  • 3-4 fresh basil leaves, chopped (optional)
  • 2-3 garlic cloves, pressed
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 5 tablespoons olive oil
  • fresh parsley or dill for garnish (optional)

Wash your vegetables. Slice the eggplant into 1/2 inch slices. In a small bowl mix olive oil, salt and pepper. Brush the mixture on both sides of eggplant.

Preheat heavy bottomed skillet until very hot, reduce heat to med-high, and roast eggplant slices 2 minutes on each side until golden brown. Place it on a platter and let cool completely.

Meanwhile, in a medium bowl, mix together mayo, cream cheese, basil leaves, garlic. Set aside.

Slice tomatoes. Now we can start putting our appetizer together. Using spatula, place about 1 tablespoon of cream cheese mixture on eggplant slices, put tomato slices on top.

Garnish with fresh parsley or dill.
