Last Sunday we got out of church so ready for brunch, when my sister-in-law came up to me and shared some of the “goodness” balls. They were so good and sweet, not too sweet, with a perfect crunch, not sticky, and just hit the spot. Apparently, her friend brought those to her house the night before, and left us with the challenge to figure out what’s in it. It wasn’t hard to figure out that Rice Krispies, Craisins. and Peanuts were in it, but what was it coated with?

My first guess was marshmallows, of course, but marshmallows would make it very chewy, the balls weren’t chewy at all. Someone suggested condensed milk with butter, but the balls weren’t greasy at all. And then white chocolate came to my mind. So I had to stop guessing and make them right away. They came out perfect, and pretty much identical to the ones I was given to try. The best thing about this dessert is that it takes, literally, 10 minutes to make, plus its easy enough for kids to get their hands on. This recipe makes 12 balls. You can always double or triple the recipe as needed.

Ingredients:

  • 1 cup white chocolate chips, melted
  • 1/4 cup craisins or raisins
  • 1/4 cup roasted peanuts, chopped
  • 1/4 cup pretzels, choped
  • 1 cup rice krispie cereal

Melt chocolate chips in microwave for 30 seconds, or in double boiler. I usually heat water in saucepan, place bowl over it, and put chocolate in a bowl – there, homemade double boiler 😉

Combine all the ingredients. Pour melted chocolate over mixture, stir to combine.

With the small ice cream scoop, or a tablespoon scoop the mixture into a small muffin liners. Let sit in a cool place for about 3 minutes. Done!

    Sounds great! I will have to try that. I made similar with Rice Krispies cereal, roasted sunflower seeds shelled, almond juvenile mix with white chocolate.

      I guess there is no right or wrong on that one. I myself going to try different combinations as well. Sunflower seeds sound so good 😉

          Wonderful! I’m so glad you liked it. I’m making these again today with the group of kids. This is going to be fun. No bake, no mess, no worries:) can’t think of an easier dessert.
