This Apple Roulade with Pecans recipe is very delicious, easy to make, and quick. I guess it really matters for busy moms like myself. I’ve been so caught up with all the kids activities lately, that couldn’t photograph or post a single recipe in two whole weeks! I’ve been cooking a lot as always, but since its getting dark earlier, I have less daylight for my photographs. By the way,this is a very valuable lesson that I’ve learned from fellow bloggers,- best pictures are those that are taken in natural light. This particular recipe was photographed in the evening with artificial lighting, so please don’t mind the quality of pictures. Apple Roulade is the one that really worth your attention. I promise, you won’t be disappointed.
Well, here I am, posting another dessert recipe, that I hope you will enjoy. We’ve picked so many apples this year, and I’m excited to share my favorite “apple” recipes with you!
Ingredients:
- 1 sheet puff pastry dough
- 4 apples, thinly sliced
- 1/4 cup farmer’s cheese
- 2 egg yolks
- 1/2 cup toasted pecans, chopped
- 1 tablespoon sour cream or plain yogurt
- 1 tablespoon rum
- 1/2 cup powdered sugar + a little more to sprinkle over the top
In a large mixing bowl, combine egg yolks, powdered sugar, farmer’s cheese, rum, and sour cream. Add chopped pecans.
Spread the mixture over the puff pastry dough. Top it with sliced apples.
Roll the dough into the roulade, and cut it into 1 inch thick pieces.
Bake at 350 degrees F for 25 minutes. Let cool. Sprinkle with powdered sugar. There you have it.
