Roses are red, Violets are blue… We love Beets, and you should too! How’s my poetry? All I’m trying to say is that highly nutritious beets are good for you! Due to it’s richness in nutrients, vitamins and minerals, beets have a wide range of health benefits. First of all, beets are very good energy boosters, something that we all need. Beets are good for heart health, reduces cholesterol. Beets are also used to treat anemia, the low iron level in blood, which many kids have while growing up. I can go on and on talking about benefits of eating beets, but I hope that what I have so far is convincing enough. 🙂
I grow beets in my garden. They’re so easy to grow, and very convenient for me to always have them, since I use beets pretty often. Its one of the main ingredients in Borshch, and Vinigret (Potato Salad with Beets), and of course this Salad. What about Beet Juice or Smoothie? In winter its different story, I depend on store-bought beets. Very often, at the register, cashier would stare with puzzled look at my bag full of beets, and ask me what in a world do I do with them. Seriously?! I thought everybody know, and love beets.
So, I decided to share this Beet Salad recipe, in case you haven’t cooked beets before. I don’t want you to be missing out on this anymore. While many people looking for chocolate desserts and sweets for Valentine’s Day, I decided to share this recipe anyways, because I LOVE my family, I LOVE beets, and I LOVE steak that’s going to be served with Beet Salad and Baked Potato on the side 🙂 Probably not gonna have any room for dessert anyways. But if you still want a dessert, go ahead and grab this super easy recipe.

When shopping for beets, try getting rich red beets of uniform size with no soft spots. Rinse before cooking, but do not cut off the stems, this will prevent beets from “bleeding” while cooking. In saucepan, over medium heat, in boiling salted water, heat while beets to boiling. Reduce heat to low, cover and let simmer for about 30-45 minutes, until fork-tender. When ready, let them cool, and then peel and shred. In a separate bowl, mix mayo and garlic. I intentionally left the quantity of ingredients out. When making this salad, there’s no right or wrong. I like my salad to be more garlicky, so I added 4 garlic cloves, you can do less if you prefer just a hint of garlic. Same with mayo, I used 2 tablespoons for the amount of beets I had, plus I didn’t want the salad to be too creamy, but some people do.
Combine everything and mix well. There you have it! Enjoy!
My kids were busy making Valentines for the classrooms, and this year we decided to do something that does not involve candies. First, they love making crafts; second- for the good cause 😉 It took as 2 evenings of putting them together. Was buying candies way easier? Yes and no! Its kind of like buying frozen meal instead of cooking it from scratch, its tasteless, even though its easy. Our Valentines have personal touch, and the girls are so proud and excited to share them with friends. Check this out! These are bubbles, – “you blow…..”, – get it?
