I don’t know much about Asian cuisine, but I like few things that I tried in Asian Buffets, and attempting to re-create them at home. Chicken Chow Mein is a simple quick dish that anyone can put together. Vegetables of your choice can be chopped ahead of time. Chicken can be substituted with steak. It is up to you. What I’m trying to say here is that it is so easy to have a beautiful and tasty food on your table for dinner everyday, all it takes is a little bit of planning.
Everything that you see on the pictures is a double of this recipe that serves about 8-10 people. Ingredients are given for 4 servings.
Ingredients:
- 8 oz fresh yakisoba noodles
- 2 skinless chicken breasts, cut in strips or cubes
- 1 big carrot, cut in thin sticks
- 1 onion, cut in half rings
- 2 garlic cloves, pressed
- 1 inch piece fresh ginger, grated or finely chopped
- 1/2 red bell pepper, cut in strips
- broccoli
- brussel sprouts, quartered
- 1 tablespoon soy sauce (you can adjust it at the end if you need to)
- 1 tablespoon Sweet’n’Sour sauce (optional)
- sesame oil
- sesame seeds for garnish (optional)
- pinch of salt
In a skillet with some oil, over high heat, stir-fry chicken for a few minutes until golden, season with salt, then put it aside in a plate.
Stir-fry onions and carrots, set aside.
In the same skillet stir-fry the rest of vegetables for about 2 minutes, add 1 pressed garlic clove, reduce heat, add 1/3 cup hot water, cover, and let steam for additional 2 minutes.
Preheat the large wok. Reduce heat to med-low, add some sesame oil, garlic and ginger, and toss it for 30 seconds on the skillet. Make sure it doesn’t get burned. Add soy sauce along with Sweet’n’Sour sauce, and 2 cups hot water, mix together.
Add noodles to the sauce. Add chicken, onions, carrots, mix well, cover and let simmer for about 5 minutes.
Toss with the rest of vegetables, sprinkle sesame seeds on top, and serve. Try using chopsticks to eat it. I gave up after few minutes of trying, didn’t go well. I do much better job with the fork. 😀
