While grocery shopping at my local grocery store, I stopped by seafood counter to get some salmon for dinner, and automatically grabbed a recipe card from the counter. I’m always on a look out for good recipes, especially the ones with seasonal ingredients, and are quick to prepare and healthy at the same time. In summer time, the last thing I want to do is spend my whole day in a kitchen. So, this recipe of Pan Roasted Salmon with Cherry Relish caught my eye because I had a whole box of cherries at home, plus cherry relish sounded so good and easy, and I decided to give it a try. And I’m so glad I did. My whole family loved it!
I’ve substituted some ingredients with the ones that I thought would taste better. The recipe called for cherry vinegar, I substituted it with some lemon juice and sweet cherry wine. You can use any type of cherries for this recipe, I used sour cherries, which I absolutely love. My sister brought me whole box of sour cherries from her recent trip to Eastern Washington, so now I’m trying them in different recipes. The cherries are not that sour, its just that they are not as sweet 😉 Perfectly perfect for Cherry Relish!
Ingredients:
Cherry Relish
- 3/4 lb cherries, pitted
- 1 tablespoon basil, cut thin
- 2 shallots, sliced tin
- 1/2 tablespoon kosher salt
- 1/4 teaspoon ground pepper
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon sweet cherry wine
- 4 tablespoons olive oil
Mix al ingredients and chill.
Ingredients:
Salmon
- salmon fillet, cut in equal portions
- 3 oz olive oil
- 1/2 tablespoon kosher salt
- 1/4 teaspoon pepper
- fresh lemon juice to sprinkle over salmon (optional)
Preheat oven to 450 degrees F. Sprinkle salmon with some lemon juice, pat dry. Oil and season salmon on all sides. Heat large saute pan with 2 tablespoons of oil to the point that the oil begins to smoke. (I used cast iron skillet, which is perfect for the oven as well). Carefully place pieces of salmon into pan one at a time. Once all the pieces are in the pan allow the pan to get hot again, and salmon to start sizzling. Place pan into hot oven for 5-8 minutes.
Remove from oven, letting fish rest for 5-10 minutes. Finish with a dollop of cherry relish on top of each piece of fish.
