This soup with meatballs is my family’s very favorite. It is a great quick and easy recipe that can be done under 45 minutes. I usually cook it on a busy weekday, when I’m on the run between music lessons, and basketball practices.
I use Italian Style Meatballs from Costco for this soup. You can use any kind of meatballs, and of course you can substitute barley for rice or noodles, if you wish.
This is the soup that my kids are actually happy to devour. Gotta love it, right? Let’s get cooking.
Ingredients:
- 16 cups hot water
- 1 large carrot, shredded
- 3 large potatoes, cut into 1/2 inch cubes
- 1/2 cup barley, rinsed and drained
- 1 medium onion
- 30 meatballs (I buy Italian Style Meatballs from Costco)
- 2 tablespoons salt
- fresh ground pepper
- 1 bay leaf (optional)
- fresh parsley and dill (optional)
In large pot over high heat bring water to boil. Add barley, and onion, bring to boil. Cook over low-medium heat for 5 minutes. Add potatoes, carrot, salt, and bay leaf, and bring to boil. Add meatballs, and cook until potatoes and barley are ready, about 15 minutes. I like to add fresh ground pepper and fresh herbs at the end. How easy is that? Enjoy!
