BROWNIES WITH PEPPERMINT BARK

Brownies with Peppermint Bark (19 of 24)

These Brownies are guaranteed to satisfy all you sweet tooth cravings! In this recipe, chocolate has met its perfect mate – peppermint. Chocolate + Peppermint = fudgy on the inside with peppermint crunch pure goodness! So easy, so good, so worth it! To make it more exciting, I substituted butter with coconut oil, and sugar with honey – less calories =  less guilt. How’s that? Also, its a perfect dessert to make with your children. My kids are always happy to help in the kitchen, especially if there is chocolate involved. These brownies with Peppermint  Bark would make a gorgeous Christmas gift, and also be a perfect dessert to bring to any party, since it could be done ahead of time. Its that time of the year! Brownies with Peppermint Bark (21 of 24)

Ingredients:

1+1/8 cups coconut oil
1 +1/2 cups bittersweet chocolate chips
3 large eggs, room temperature
3/4 cup honey
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup + 2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1 cup Peppermint Bark, chopped

Start with preheating oven to 350 degrees F. Line a 13X9 inch baking pan with parchment paper and grease (I did not line, and it still turned out good)
In a double boiler, melt coconut oil and chocolate chips.

In a bowl, whisk together eggs, honey, salt and vanilla. Gently whisk into the chocolate mixture.

In a small bowl, sift flour and baking powder. Fold into the chocolate mixture.

Spread half of the mixture in the prepared pan. Sprinkle with half of chopped peppermint bark. Top with the remaining batter and spread evenly. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean. Let cool, then sprinkle with the rest of peppermint bark.

      So true! I actually had to put a “Do not touch!” note on a platter, so I at least could finish photographing. Definitely, there were no leftovers 😉

    Mmmmm yummmm vera @ usual babe u don’t disappoint in your recipes @ all chocolate and peppermint what could be better lmao on my to bake after Passover list with the peppermint bark does it come whole or did u buy candies and crush them love mint so much @ an adult but @ a little kid didn’t care for it until I got older and tried it in a cookie with chocolate then I was hooked

      You can crush candies or you can buy peppermint bark. I know Winco Foods carries it in bulks. Same here, I didn’t care much about peppermint as a child, now I love it, especially with chocolate. Enjoy!

    Oh really cool gr8 to know that unfortunately no winco by me lol @ i live in bk ny heard winco is cool I’ll just hafta go to my other supermarket choices (thank g-d there’s plenty in nyc ) wow looks like we have something in common gurl however am wondering if I can sub coconut oil for peanut oil since I’m allergic to coconut or would butter be a better replacement

      If you’d like to substitute coconut oil, I think, butter is better choice, in this particular recipe.

        Ok sure got that butter it is I bet these would be gr8 with a cuppa coffee or tea ahhhh I can see it now thanx lots @ usual darlin for your cooking and baking tips this is one of my major go to sites been a real health and time saver eat out less now and cook and bake lots more there ain’t nothin like homecooked foods or homebaked goodies
