These potato fritters are absolutely delicious! This is an extremely amazing way to use the leftover mashed potatoes. Leftover makeover, I’d say. Perfect for after party quick lunch idea, or just a snack, these potato fritters are so easy and quick, and just a smart and delicious way to use all the extra mashed potatoes.
Ingredients:
- 8 cups mashed potatoes
- 1 onion, diced
- 2 eggs
- 1 cup flour
- 1 garlic clove
- salt, pepper to taste
- oil for frying
With some oil, over medium-high heat, cook onions until golden.
Combine onions, mashed potatoes with 1/2 cup flour, eggs, garlic, salt and pepper. Reserve the other 1/2 cup of flour for later.
I like to use ice cream scoop to portion potato mix. Form little patties, flatten them with your hands. Roll potato patties in the remaining flour. Now ready to fry.
Preheat the skillet with 1 tablespoon oil. Cook potato fritters over medium heat, until golden brown on both sides. Keep adding oil as needed.
