This is probably the easiest recipe that I’ve ever posted here. I like potatoes! I absolutely love baked potatoes! This is a perfect side dish. Plus, potatoes are available all year round, so its a must to learn how to cook it different ways, right?
So, always choose smooth, well-shaped, firm potatoes free of blemishes or sprouts. 1 potato= 1 serving.
Ingredients:
- medium baking potatoes, unpeeled
- salad oil
- sour cream, butter, shredded cheddar cheese for topping
- salt
Preheat oven to 450 degrees F. Wash and dry potatoes; brush with salad or vegetable oil. My four-year old daughter loves to help in a kitchen. She enjoyed brushing on the oil so much that she kept asking me to bake potatoes the next day, and the day after. 🙂
Place potatoes in shallow pan and bake 45 minutes or until fork-tender. If you like a steamed texture, wrap potatoes in foil before baking, otherwise its going to be nice and crispy on the outside, and that’s the way we like it. Keep in mind that aluminum foil accelerates the cooking, so you may want to check for doneness with the fork after 30 minutes.
Cut the top open. Squeeze potatoes to the middle. Caution: very hot!
Serve with choice of topping.
