Cucumber Dip (8 of 10)

Vegetables are at their best in the summer months. What could be better to serve your veggies with than a perfectly perfect fresh dip. The moment I put veggies on the platter, and have the dip besides it, my children devour it within minutes. How do you like that? I used to buy ranch for that purpose, but not anymore!

I’m harvesting lots of cucumbers in my garden right now. We’re actually having a cucumber fiesta. So, this Cucumber dip is a perfect healthy dip to go with vegetables, and its guaranteed to become everyone’s favorite appetizer.

Ingredients:

  • 4 large cucumbers, peeled and grated
  • 1 teaspoon sea salt (I had to add a little bit more at the end)
  • 2 cups plain Greek yogurt
  • 3-4 cloves of fresh garlic, finely chopped or pressed
  • juice of half a lemon (or less)
  • 2 tablespoons extra virgin olive oil
  • 2-3 fresh mint leaves, chopped
  • 1 teaspoon fresh dill
  • fresh ground black pepper to taste

Cucumber Dip (1 of 10)

Combine grated cucumber with salt, mix, let stand for about 5 minutes. Using cheesecloth or kitchen towel strain as much liquid as you can.

Combine the rest of the ingredients with cucumbers. Mix well, and let chill for several hours or overnight.

Cucumber Dip (5 of 10)

Serve with your favorite vegetable dippers or crackers. Cucumber Dip stays fresh in the fridge for couple of days in the airtight container.

    Darling Vera, Persians have a very similar side dish called mast’o khiyar (yogurt & cucumber). I love your dip, although I will eat it just by itself. 😀 )))
