GREEN SALAD WITH POPPY SEED DRESSING

When it comes to salad, for me, it has to be healthy, well dressed and satisfying. Most of the time I would turn to romaine lettuce, Ranch or Caesar dressing (homemade of course), but this time I really wanted to try going beyond usual lettuce and try something more interesting. This Green Salad with Poppy Seed Dressing is definitely all that! – perfect combination of textures, flavors, and of course, nutrients. I hope you’ll love it as much as we did.

Salad with Poppyseed Dressing (10 of 11)

Ingredients for Poppy Seed dressing:

  • 2 tablespoons pomegranate molasses
  • 1/2 tablespoon apple cider vinegar
  • 1/2 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 3/4 teaspoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon poppy seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Pomegranate Molasses can be found in most European specialty markets. If you can’t find it, molasses can be substituted with 1/2 teaspoon vinegar and 1/2 teaspoon honey. The flavor just isn’t going to be as tangy.

I used Raw and Unfiltered Honey. “Regular” honey partially loses vital vitamins and nutrients during the pasteurizing process.

And, of course, Raw Apple Cider Vinegar is a perfect addition to any salad as its made with organic apples, and is unfiltered, unheated and unpasteurized.

For Salads, Organic Extra Virgin Olive Oil in a dark bottle is the best choice as it has the most nutrients.

In a bowl, whisk together all dressing ingredients until smooth. Refrigerate until ready to use.

Ingredients for Green Salad:

  • 8 cups dark leafy greens (I used organic spring mix)
  • Poppy Seed dressing, to taste (I used about a half of recipe, and refrigerated the rest for later)
  • 1/4 cup almonds, sliced
  • 1/2 cup pomegranate seeds

Salad with Poppyseed Dressing (6 of 11)

Transfer the greens to a serving bowl, pour in the dressing and toss to coat.

Toss with almonds and pomegranate seeds.

    Mmmmm love poppy seeds never tried it in a dressing but looks way good another thing to add on my to make list now just need to convince my dad not to buy the bottle he’s totally missing out on homemade vs the bottle pomegranate molasses never tried sounds way interesting love anything pomegranate you have me totally hooked gurl

    Yea ditto they’ve been such a gr8 health and time saver very easy breezy peezy and yet also healthy and comforting too especially for a rainy day or cold chilly freezing fall winter day night gr8 to know pomegranate molasses is a good thing to have will definitely be buying it soon have a gr8 day and week ahead btw happy belated mother’s day cheers
